Spicy Chocolate Zucchini Bread
1 1/2 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cayenne pepper
1/2 cup brown sugar
1/2 cup vegetable oil
1/3 cup maple syrup
2 large eggs
1 teaspoon vanilla extract
2 cups shredded zucchini
1 cup semi-sweet chocolate chips
1 Whisk together dry ingredients (flour, salt, baking powder, baking soda, cayenne pepper) in a bowl.
2 Whisk together sugar, vegetable oil, syrup , eggs, and vanilla extract in a separate bowl.
3 Stir dry ingredients into wet ingredients. Then fold in zucchini and chocolate chips.
4 Pour thick batter into a 9×5-inch loaf pan that has been lightly buttered and floured.
5 Bake bread at 350°F for 70-75 minutes until a tester comes out clean.
6 Let bread cool for 5 minutes in pan, then invert and carefully remove bread. Let cool for another 15-20 minutes before slicing.
7 To store, wrap tightly in plastic wrap and store in the fridge for up to a week.
